The Mexican Pacific Coast offers perfect conditions for the cultivation of a very special agave species. From the heart of the Blue Agave, also known as “house of the moon” among the inhabitants, a sweet syrup is extracted from which the most famous drink of this region is distilled: the tequila. The highest-quality tequila is called “anejo”. It must rest in oak barrels for at least one year.
